Chickpea Snack
Kit Cookbook
1 15-oz. can chickpeas, rinsed
1 Tbsp. extra-virgin olive oil
2 tsp. ground cumin
1 tsp. dried marjoram
1/4 tsp. ground allspice
1/4 tsp. salt
Preheat your oven or BBQ to 450°F. Use whatever is working. I have an electric toaster oven, gas BBQ, Electric Treager or wood fire pit.
Open chickpeas with a manual can opener.
Blot the chickpeas dry and toss in a bowl with olive oil, cumin, marjoram, allspice and salt. Spread the chickpeas on a rimmed baking sheet.
Bake the chickpeas, stirring once or twice, until browned and crunchy, about 25 to 30 minutes. Let cool on the baking sheet for 15 minutes.
Enjoy a soothing cup of dark gourmet chocolate with mini marshmallows while you wait. Marshmallows last a VERY long time in a pantry. Use you microwave, electric stove, gas BBQ or wood fire pit if your favorite cooking appliance is not working.
Crunchy/salty snack while waiting for supper.
