"Pandemic-proof" Puddin'

3 11.5 ounce boxes of silken tofu
12 oz. semi-sweet chocolate chips
1/8 cup chocolate almond milk (in shelf-stable carton, of course)
1 cup of your favorite granola (I recommend a chocolate almond granola to keep with the theme)
Whip together the tofu and almond milk with a whisk (or a food processor if you have power) until thick.
Melt the chocolate chips in a microwave (or a double-boiler set up if using a flame or cook top).
Add the melted chocolate to the tofu mixture and whip until smooth. Let chill for 30 minutes.
Serve in one-cup scoops garnished with a generously sprinkle of granola.
