"Preparedness" Cherry Pies
Kit Cookbook
1 cup crushed corn flakes
1/4 cup granulated sugar
3 Tbsp. softened butter
1 (21 oz.) can Michigan cherry pie filling
Shaved dark chocolate
Combine crushed corn flakes, sugar and butter in a bowl. Press the mixture into a lined muffin tin, forming a well to hold the cherry filling.
Set the corn flake mixture aside to firm. If possible, place the muffin tin in a refrigerator/freezer powered by a generator or place in a cooler over dried ice.
Top the corn flake crusts with cherry pie filling. Garnish with dark chocolate.
Cherries--specifically, tart cherries--are a signature Michigan ingredient that are just as delicious baked in a pie as they are dried, juiced, jarred or dipped in chocolate. Michigan, according to Michigan.org, produces 75 percent of the tart cherries grown in the United States. This Emergency Kit Cook-Off combines cherries (tart cherries if you've got 'em) and corn flakes (Kellogg's is headquartered in Battle Creek, Mich.) into a sweet treat we call "Preparedness Cherry Pies." This recipe was created in collaboration with Do 1 Thing (www.do1thing.com(link is external)) in honor of April's goal of creating an emergency food supplies kit that meets the needs of your household for three (3) days without outside help.
