"Shelter-in-Place" Pumpkin Bread

1 2/3 cup all-purpose flour 1 cup sugar 1 Tbsp. ground cinnamon 1 tsp. baking soda 1/4 tsp. baking powder 1/4 tsp. salt 1 cup pumpkin puree 1/2 cup unsweetened applesauce 1/4 cup vegetable oil 3/4 cup dark chocolate chips 3/4 cup chopped walnuts
Preheat oven to 350 degrees. Grease and flour a loaf pan. Combine flour, sugar, cinnamon, baking soda, baking powder and salt in a large bowl. Combine pumpkin, applesauce and oil in a separate bowl. Stir in dark chocolate chips. Fold pumpkin mixture into the flour mixture. Pour batter in prepared loaf pan. Sprinkle chopped walnuts on top of the batter in the loaf pan. Bake until toothpick inserted in the center of the loaf comes out clean, approximately 1 hour.
I cooked in my gas oven. In an emergency, consider making in a Dutch oven on your outdoor grill.
Moist pumpkin bread with dark chocolate pieces. Yummy treat for a snack or dessert.
