Hummus is a yummy food dip or spread made from cooked, mashed chickpeas blended olive oil, lemon juice, salt and garlic. This is a high protein snack that even my kids love!
Recipe Ingredients:
1 can chickpeas, drained (reserve the liquid)
1 Tbsp. creamy peanut butter (can be omitted for allergy reasons)
1/3 cup olive oil
garlic powder, to taste
lemon juice, to taste
salt and pepper, to taste

Directions:
If you have electricity, empty the chickpeas into a blender or food processor and blend until smooth, adding 1/2 of the reserve liquid. If you in a power outage and only a bowl, mash the chickpeas with a fork. You'll end up with a chunkier--but no less tasty--version of hummus.
Add the peanut butter, garlic, lemon, and salt and pepper, and mix into a paste. Drizzle in olive oil until the mix is the consistency of mayonnaise.
