"Bean There Can Do" Chicken Ramen Soup

A quick and hearty soup that can be customized with black beans (a 2015 Featured Ingredient), canned chicken and your favorite veggies.

Recipe Ingredients: 
  • 1 can black beans, drained
  • 1 large can chicken
  • 2 (32oz) containers chicken broth
  • 1 can carrots, drained
  • 1 can corn, drained
  • 1 can green beans, drained
  • 1 can diced tomatoes with sweet onion
  • 1 can diced potatoes, drained
  • 2 pkgs Ramen noodles, chicken flavored
  • 1 pkg tortilla strips, for topping
Directions: 
  1. In a large pot combine chicken broth, beans, chicken, and vegetables.
  2. Crush Ramen noodles in package and remove flavor packets.
  3. Add flavor packets soup mixture. Bring to a boil, then simmer.
  4. Add Ramen noodles and continue to cook for several minutes.
  5. Ladle soup into bowls and sprinkle tortilla strips on top. Enjoy!
Cooking Tips: 

Easy to have everything on hand for an emergency. Cook on the gas stove top, or camp stove in a pinch.
