Chickpea & Pumpkin Patties

Chickpea and pumpkin patties, maybe a rival to standard veggie burgers?!

Recipe Ingredients: 
  • 1 can pumpkin
  • 1 can chickpeas
  • 2 tsp. garlic paste
  • 1 tsp. cumin
  • 1 tsp. coriander
  • Breadcrumbs
Directions: 
  1. Mash all of the ingredients together--simple!
  2. Shape the mixture into small patties (I made 6)
  3. Heat a little oil in a frying pan--this could be done using a portable camping stove following safety precautions.
  4. Fry for around 5 minutes on each side, then leave for a moment to crisp up.
  5. I served with hot sauce (optional).
Cooking Tips: 

My tip would be to keep some of the chickpeas lumpy to avoid the patties being too smooth.
