Cornbread Skillet Bites

Recipe Ingredients: 
  • 1 pkg of cornbread mix
  • ½ C water
  • ¼ C unsweetened applesauce
  • 1 C, canned cream corn
  • ¼ C self-rising flour
  • Pinch of salt, as needed
  • Cooking spray
Directions: 

Mix all ingredients together. Spray cast iron skillet with cooking spray and heat on stove top. Once hot, drop batter by tablespoon onto the skillet, flipping once bubbles form around the edges.

Cooking Tips: 

Options: add sliced jalapenos or adobe peppers (may require adding more self-rising flour); add tsp of sugar to make sweet corn cakes.
