"Dangerously Delicious" Date Cake

This recipe for Chocolate Date Cake uses dried, chopped dates (dried fruit is a 2015 Featured Ingredient) and dry milk.

Recipe Ingredients: 
  • 3 Tbsp flour
  • 1 heaping Tbsp brown sugar
  • 1/2 tsp ground cinnamon
  • 1/8 tsp baking powder
  • 1 Tbsp applesauce
  • 1/2 Tbsp vegetable oil
  • 1/2 Tbsp reconstituted dry milk
  • 1/8 tsp vanilla extract
Directions: 
  1. Combine the dry ingredients (i.e., flour, brown sugar, ground cinnamon, baking powder and dried fruit) in a mug. Mix well.
  2. Add the applesauce. Mix until just combined.
  3. Add vegetable oil, milk and vanilla. Stir until just mixed.
  4. Bake until the cake sets.
  5. Drizzle with chocolate sauce (optional)

Mix and match different dried fruits, chocolate and butterscotch chips, and spices (e.g., cinnamon, allspice, nutmeg, clove, cocoa, chipotle, etc.) to customize your cake.
