This hearty, flavorful dish is simple and satisfying to the "foodie" in all of us!
Recipe Ingredients:
1 can of tuna or salmon, drained
1 small can sweet corn, drained
1 small can garbanzo beans, drained and rinsed
1 can black beans, drained and rinsed
4 cups of cooked Spanish or white rice
1 can of coconut milk\
3 Tbsp sun-dried tomatoes in olive oil (or tomato paste)
Dried garlic, onion and cilantro to taste
Directions:
Mix tuna or salmon with sun-dried tomato paste in olive oil, corn and coconut milk. Bring the mixture to a simmer in s pot.
Cook the rice in a separate pot until tender. Add the black been and garbanzo beans once the rice is cooked.
Add the spices to the tuna mixture 5 min before serving.
Serve over the "dirty" rice mixture.
