A different twist to make your fried rice. Sweet, crunchy, salty, healthy, and you can make it even during an emergency! Try it and experience a wonderful explosion in your mouth!
2 cups - Cooked Rice (brown, white or wild) Your choice!
1 tsp / a pinch or two - Fried garlic
1 tablespoon - EVOO (Extra Virgin Olive Oil)
To taste - Salt and ground black pepper
Approximately 1 cup - Diced dried fruits (featured ingredients): apricots, mangoes, pineapples, raisins and plantains
Approximately 1 cup - Nuts (cashews, almonds, peanuts, pumpkin seeds, pine nuts)
Turn up your stove to medium heat.
Put about a tablespoon of EVOO on the pan when it is hot.
Add the cooked rice, sprinkle about a pinch or two of the cooked garlic, and salt and pepper to taste.
Mix until all the ingredients are well blended.
Add the nuts and the dried fruits and mix/stir it well until all ingredients are hot.
Turn off the stove and serve.
Usually on a normal fried rice recipe, you cook the garlic first, but because the fried garlic is already cooked-- it easily burns. That's why putting the rice in first will prevent the garlic to burn.
