I used black beans, Tang , honey, and some dried fruit. But really anything you might have on hand in the way of vegetables, or fruit you could use to make this.
Recipe Ingredients:
Salad:
2 cans black beans (about 30 oz), drained
1 (15-oz) can corn, drained
1 (15-oz) can tomatoes, diced, drained
1/2 cup diced dried fruit
1 Tbsp of onion flakes (if you have them)
Dressing:
1/4 to 1/2 cup of Tang mix (mixed with the bottled water).
3 Tbsp of honey
Pinch ground cumin
Salt & pepper
Directions:
Combine the black beans, corn, tomatoes, dried fruit and onion flakes in a large bowel. Mix well. Set aside.
Mix the Tang drink mix to your taste and then add the honey. Mix well with a whisk or fork so you get it well blended. Add salt and pepper to taste.
Pour dressing over salad mix well. Let stand for 15 to 20 min.
