"Preparedness" Cherry Pies

Cherries--specifically, tart cherries--are a signature Michigan ingredient that are just as delicious baked in a pie as they are dried, juiced, jarred or dipped in chocolate. Michigan, according to Michigan.org, produces 75 percent of the tart cherries grown in the United States.This Emergency Kit Cook-Off combines cherries (tart cherries if you've got 'em) and corn flakes (Kellogg's is headquartered in Battle Creek, Mich.) into a sweet treat we call "Preparedness Cherry Pies." This recipe was created in collaboration with Do 1 Thing (www.do1thing.com) in honor of April's goal of creating an emergency food supplies kit that meets the needs of your household for three (3) days without outside help.

Recipe Ingredients: 
  • 1 cup crushed corn flakes
  • 1/4 cup granulated sugar
  • 3 Tbsp. softened butter
  • 1 (21 oz.) can Michigan cherry pie filling
  • Shaved dark chocolate
Directions: 
  1. Combine crushed corn flakes, sugar and butter in a bowl. Press the mixture into a lined muffin tin, forming a well to hold the cherry filling.
  2. Set the corn flake mixture aside to firm. If possible, place the muffin tin in a refrigerator/freezer powered by a generator or place in a cooler over dried ice.
  3. Top the corn flake crusts with cherry pie filling. Garnish with dark chocolate.
