Pumpkin Pie Parfait

The taste of pumpkin pie in an easy to make parfait!

Recipe Ingredients: 
  • 4 vanilla pudding snack packs
  • 1 can spiced pumpkin
  • Crushed graham crackers or vanilla wafer cookies
  • sugar or sugar substitute
  • Pumpkin pie spice (i.e., ground nutmeg, cloves, ginger, and cinnamon) if using plain canned pumpkin
Directions: 
  1. Empty vanilla pudding cups into a mixing bowl with 1/2 can of pumpkin. Season to taste with pumpkin pie spice (i.e., ground nutmeg, cinnamon, clove and ginger) if using plain canned pumpkin.
  2. Sweeten the mixture to taste with sugar or sugar substitute.
  3. Spoon the mixture back into pudding cups or bowls and top with crushed graham cracker crumbs or vanilla wafer cookies.
Cooking Tips: 

Even if I'm using spiced canned pumpkin, I like to bump up the flavor with extra dashes of nutmeg, cinnamon, clove and ginger.
