A yummy, fast salad that's chock full of protein.
Recipe Ingredients:
1 can chickpeas
1 can black beans
1 can corn
1 can artichokes
1 can diced jalapeños (or green chiles)
Italian dressing
1 Tbsp. dried basil 1
Tbsp. dried oregano
1 tsp. garlic powder
Salt & pepper to taste
Directions:
Drain all canned items and place in bowl.
Dice artichoke hearts and add to bowl along with the desired amount of peppers.
Add basil, oregano, garlic powder, salt and pepper.
Add dressing to taste.
Stir together and serve.
