Recipe Ingredients:
3 C dried shitake mushrooms, rehydrated; reserve mushroom broth
2 C dried “chicken” slice (vegan chicken)
Olive Oil to cover bottom of pan
.5 C soy sauce (or liquid aminos)
1 C red wine
1 T garlic power
4 C water
¼ C corn starch
1 pkg gnocchi
Directions:
Place mushrooms and “chicken” slice in bow and pour boiling water (about 4 C) over it.
When fully rehydrated, squeeze excess water and reserve liquid
Cut larger mushrooms and chicken into 1” squares
Heat olive oil in soup pot and sauté mushroom and chicken
When chicken starts to brown, add 3 C reserved liquid from mushrooms, red wine, and soy sauce and bring to boil.
Mix corn starch with ½ hot liquid to dissolve then add to pot. Mix until sauce thickens. Simmer. Season to taste.
Prepare gnocchi according to package directions.
